A questions for a cook with paranoya to answer...!!!?

I never worry much about contamination while cooking and have no formal training... im not licking raw chicken or doing anything crazy like that but i found a recipe i really wanted to try making for slow cooker chicken taco soup... part of making it is putting raw chicken and veggies into a broth and cooking the raw chicken on low heat in a crock pot for a minimum of 5 to 7 hours...this chick said she wont even try it b/c she doesn't want e. coli i think the crock pot will get everything hot enough long to where i wont have to worry about that... I am right? or heaven for bid... is she?
